  • Coconut oil spray
  • 1 1⁄2 cups wheat flour
  • 1 1⁄2 cups cornmeal
  • 2 teaspoons baking powder
  • 2 tablespoons cornstarch
  • 1 teaspoon sea or kosher salt
  • 1⁄3 cup ghee, melted
  • 1 1⁄2 cups buttermilk
  • 1⁄2 cup cow’s milk
  • 3 tablespoons chopped scallions
  • 1⁄2 cup fresh chives
  • 2 teaspoons minced garlic

Method

Step 1

Preheat your oven to 400°F.

Step 2

Grease a square baking pan with coconut oil spray.

Step 3

In a medium bowl, combine wheat flour, cornmeal, baking powder, cornstarch, and salt.

Step 4

In another medium bowl, beat together melted ghee, buttermilk, and cow’s milk until well blended.

Step 5

Gradually mix the dry ingredients into the wet mixture until fully incorporated. Then, fold in the chopped scallions, fresh chives, and minced garlic.

Step 6

Spread the batter evenly into the prepared baking pan.

Step 7

Bake for approximately 20 minutes until golden brown and cooked through.

Step 8

Once baked, cut into squares and serve warm.
